Pachyrrhizus erosus, a sweet potato relative grown for tuber. Caution: Seeds and pods are poisonous. 20-foot long vines require a very long, hot season. Originated in North America, jicama is more popular in Asia where it is used as a substitute for water chestnuts or bamboo shoot. Also known as Mexican turnip, Mexican yam bean, potato bean, and yam bean.
